How To Make The Best Banana Fritters

Growing up, my dad would always make us Banana Fritters, a Jamaican dish, he used to eat growing up. Oh yeah, if you didn’t know, my dad is from Jamaica! And although I don’t look like anything other than a gringo, I’m Chinese, Jamaican and Italian – food at my parent’s house is just as amazing as that sounds!

Perfecting this dish has not been easy… when your dad is a phenomenal cook and says “oh yea, it’s just a little of this and a little of that” it makes it very challenging to replicate. No matter how many times you cook with him. Back in college, I finally took the time to perfect the recipe and jot down the ingredients, my college roommate (hi Ashley!) will love this post! This is one of my all time favorite dishes, it brings me right back to when dad makes it. And yes, a happy dance is always included in the making of banana fritters 😛

Ingredients

  • 3 – 5 overripe bananas (best when it is a mixture of yellow and brown on the skin)
  • 2 cups all purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp nutmeg
  • 1/4 tsp cinnamon
  • 1/2 tsp Vanilla extract
  • Pinch of salt
  • 1/4 cup water
  • 1/2 cup cooking oil

Directions

  1. Mash up the bananas with a fork, then add in the sugar, nutmeg, cinnamon, vanilla extract, salt and baking powder – mix until it becomes a wet dough
  2. If it is too dry, add in a little water – the consistency should be thinker than pancake batter, but shouldn’t be like a cookie dough
  3. Heat the oil in a frying pan, keep the temperature set to low-medium, if it is too hot it will burn the outside and not cook the inside (this is something that you must stand over, as soon as you walk away it will burn… I promise)
  4. With the fork, take the mixture and drop the dough into the frying pan, cook until it is golden brown and the batter doesn’t ooze out from the inside
  5. Place cooked fritters onto a plate lined with paper towel
  6. Let cool, sprinkle with confectioners sugar and serve!
